2021 Petite Sirah Rosé

The Rosé of Petite Sirah is made from a small section of the vineyard that years ago Sam noticed ripened later than the rest of the block.  Rather than try to push the fruit to ripen quicker, he opted to harvest the clusters earlier and dedicate that block to rosé production.  Harvested at around 20 degrees Brix, these whole clusters are put directly into the press and treated just like white grapes.  The gently pressing of the juice from the dark skins and only allows a small amount of color to be extracted from the skins.  The pink juice is then fermented at cold temperatures in a small tank to dryness.  The wine then is placed in neutral French Oak barrels for ageing prior to bottling.    
 
Inspired by the finest rosés from Tavel in the south of France, this dry, crisp, and vibrant wine portrays delicate aromatics of strawberry, watermelon, mint, and jasmine with tropical notes of pineapple and citrus on the palate.  With only 12% alcohol and no residual sugar, this wine pairs wonderfully with al fresco dining around the pool or in the courtyard.
