Vintage Notes

A warm spring prompted early budding on the vines and temperatures were mild through mid-summer.  Temperatures quickly shop up in the last week of August leading to the beginning of harvest early September.  Late September brought chilly temperatures and some rain, forcing a break in harvesting.  A wonderful Indian Summer warmed up early October, leading to the ripening of fruit and integrated, mature tannins that have made this vintage so renowned.

Vineyard Notes

Terra Valentine is blessed with two estate vineyards that capture the best of Spring Mountain - The Wurtele Vineyard(600-1100 ft) and the Yverdon Vineyard(1900-2200 ft).  They are distinguished by a diversity of mountain terrain and vines that are well-adapted to the environment.  While the mountain sites present challenges - including accessibility, diversity of soils, ripening, and hand labor - they reward the effort in wine filled with intense flavor and color.  Each vineyard, with a unique set of soils, exposures, and micro-climates, produces a wine of distinction and personality reflecting the terroir of the estate.  Our Spring Mountain District Cabernet Sauvignon is a blend of both the Wurtele and Yverdon Vineyard Estates. 

Winemaking Notes

Our 2007 Spring Mountain District was picked from 14 different vineyard blocks between the 14th of September and the end of October.  This 100% cabernet sauvignon represents our Wurtele vineyard by 77% and 23% of our Yverdon Vineyard.  The wine was fermented during a 25-day period and aged for 22 months in French oak barrels, 33% of which were new.

Tasting Notes

Nose of black violets, cocoa nibs, eucalyptus, mint, cedar and Mexican chocolate.  The texture is almost indescribable; very '07-esque with soft, well-integrated tannins and plush ribbons of fruit that take the palate on a layered ride of caramel, toasted marshmallow, mineral notes and shitake-umami flavors.  Drink now through 2018.
